How do I cook it?

 

This is a question we get asked quite often.  So here are a few cooking tips when cooking pastured meats.

 

One of the most important steps you should do when cooking meat is let it get to room temperature.  Now this doesn’t take hours.  Take whatever you’re cooking out of the fridge and let it sit out in the time you have.  Pat dry any meats that you might sear first.  Season at this time also.

 

Cooking pastured meats is not much different from what you are already doing, but you may find that they cook a little quicker than store bought meats.  Chops and steaks should be cooked quickly and at higher temperatures.  Cuts like roasts are best seared on all sides then cooked low and slow.  Chicken tends to work with any cooking method just follow your inclinations.  

 

Lastly one other very important step is let it rest.  Let meat rest for a least 5 minutes but 10 minutes is best.  Cover the meat loosely with foil or a lid and allow the meat to reabsorb juices.
